This is rice koji made from domestically produced rice with clearly identified origin.

[Uses Yellow Koji Mold]
Compared to the white koji mold commonly used in many commercially available rice koji, we use yellow koji mold, which has a stronger ability to break down proteins.
When you marinate meat or fish in shio koji or shoyu koji overnight, the breakdown of proteins increases umami (amino acids) and tenderizes the meat.

[Also Ideal for Amazake Making]
It can also be used for making amazake. It results in a clean and refined sweetness.

Unlike block-shaped rice koji, this is loose, so there's no need to break it apart, and it can be used immediately after opening.
As this is dried rice koji, it contains more active koji ingredients compared to the same amount of fresh koji.

[Room Temperature Storage Possible]
Store away from direct sunlight, high temperatures, and humidity.
Precautions for Use
While it can be stored at room temperature, it may turn brown due to the characteristics of yellow koji mold. This is a sign that the koji mold is alive and does not indicate a problem with quality.
Refrigeration can suppress discoloration.
We recommend refrigerating after opening.
If you do not plan to use it for a long period, it can be stored frozen for up to 1 year.
